Lentils are good for you and tasty too!
Lentils offer great slow release energy and a good boast of protein and fibre.
This simple salad is quick to make and has lots of taste.
Cut 1/2 red pepper and chilli pepper in to small bits. Mix with lentils and cherry tomatoes along with flat parsley. Boil broccoli for 6 minutes and perhaps some green beans. sprinkle with crumbly goats cheese or feta, season with a little sea salt and pepper along with some thick balsamic and olive oil.
Add beetroots, roasted pine nuts, cucumber if desired.
A really heart lunch to keep you energised throughout the day.
